Beyond Meatloaf
This is a great recipe and a family favorite. This recipe makes 1 ½ loafs using a standard loaf pan of approximately 8 ½ x 4 ½ x 3 inches. It serves approximately 8 people.
Ingredients
“Meatloaf”
- 2-16oz pkgs Beyond Burger (can use an equivalent weight of Beyond Burger patties) 
- 1 ½ cups rolled oats 
- 1 Tbsp Egg Replacer with ¼ cup water (use very cold water) 
- 1 Tbsp olive oil 
- 1 bell pepper, chopped 
- 1 onion, chopped 
- 3 stalks celery, chopped 
- 4 cloves garlic, minced 
- 1 tsp dried thyme 
- 2 tsp Cajun seasoning 
- 2 Tbsp vegan Worcestershire sauce 
- 1 Tbsp tomato paste 
- 3 Tbsp gluten free flour (I use brown rice flour) 
- 1 pinch salt 
- 1 pinch black pepper 
BBQ Meatloaf topping and sauce
- 1 cup Ketchup 
- 6 Tbsp brown sugar 
- 3 Tbsp Dijon mustard 
- ¾ tsp black pepper 
Instructions
- Preheat oven to 375 degrees F. 
- Mix topping ingredients and set aside. 
- Mix egg replacer and water, then set aside. 
- Saute onion, bell pepper, and celery in olive oil until slightly browned. 
- Add garlic and saute for an additional minute. Set veggies aside to cool. 
- In a large bowl, add Beyond burger, oats, thyme, cajun seasoning, vegan worcestershire sauce, tomato paste, flour, egg replacer mixture, salt, pepper, and cooled veggies. Mix well. 
- Place in loaf pans (second pan put ½ loaf in). 
- Spread a medium thin layer of BBQ sauce on top of both. Bake for 40-45 minutes until browned. 
- Cool for 10-15 minutes. Slice and serve with the rest of the topping as a sauce.
