Falafel Wraps
This is a great lunch sandwich. The falafels can be made ahead of time. I purchase a falafel mix – Tarazi Falafel Mix
Ingredients
- 10 inch tortillas 
- Hummus 
- Romaine lettuce 
- 2-3 falafels, halved 
- Chopped tomato 
- Chopped cucumber 
- Chopped dill pickle 
- Sliced avocado (optional) 
- Tahini sauce (see recipe below) 
Instructions
- Spread a thin layer of hummus on the tortilla. 
- Lay romaine lettuce in the center, then lay the falafels down the center on top of the lettuce. 
- Put tomato, pickles, cucumber, and avocado along the sides. 
- Drizzle with tahini sauce. 
- Wrap tightly, tucking up the bottom. Heat in a hot skillet on both sides. Cut in half and serve with more Tahini sauce for dipping. 
Tahini Sauce
- 1/3 cup tahini 
- 1/3 – ½ cup unsweetened coconut yogurt 
- 3 Tbs lemon juice 
- 1 clove garlic, minced 
- Salt & pepper 
-Mix all ingredients together. Will keep for at least a week in the refrigerator.
