Sauteed Broccolini with Garlic and Pine Nuts

This recipe comes from an online site called Cubes and Juliennes. It is absolutely terrific. It is also simple and quick to make. The broccolini is tossed with garlic chips, pine nuts, and a squeeze of lemon. Terrific! This recipe makes 5 servings.

Ingredients

1.5 lbs of broccolini, washed, ends trimmed, and sliced lengthwise into thin stalks

1.5 Tbs vegan butter

4-5 cloves of garlic, peeled and sliced thin

1 Tbs olive oil

2 tsp lemon juice

2 Tbs pine nuts, toasted*

2-3 Tbs water

salt and freshly ground pepper to taste

Instructions

  1. Melt butter on medium heat in a skillet

  2. Add sliced garlic and cook on medium heat until golden brown and crisp. Remove from pan.

  3. Add olive oil to the same pan and heat for a few seconds. Add broccolini and saute, tossing with tongs for 2 minutes.

  4. Reduce heat to medium low and add the 2-3 Tbs of water. Cover the pan with a lid. Cook for 3-5 mintues or until broccolini is bright green and just cooked but still crunchy. Remove from heat.

  5. Season with salt and pepper, add lemon juice and toss. Sprinkle fried garlic pieces and toasted pine nuts. Drizzle some more freshly squeezed lemon juice (if needed). Enjoy!!

  • To toast pine nuts, heat in a dry skillet over medium-low heat for 3-5 minutes. Stir constantly so they toast evenly. Transfer to a cold plate immediately to stop cooking.
