Chickpea Salad Sandwich
This is a great recipe for a chicken or tuna salad like sandwich filling. Makes enough for 6 sandwiches.
Ingredients
- 1 15-oz can of chickpeas, drained 
- 3 Tbs vegan Mayonnaise 
- 2 tsp mustard 
- 3 Tbs sweet pickle relish 
- 1/2 medium onion, diced 
- 2 stalks celery, diced 
Directions
- Slightly mash the chickpeas. Add all ingredients. Stir until fully combined. Enjoy! 
- *For a chickpea salad sandwich, add vegan mayonnaise to 2 pieces of whole wheat bread, pile on the salad to the thickness preferred. Add lettuce and sliced tomatoes. 
- **You can also add items like chopped olives, craisins, or nuts to the chickpea salad mix if desired. You could also substitute sweet pickle relish for dill pickle relish for a much tarter taste.
