Rolled Oat Bars
This recipe comes from my sister, Andrea. These bars are a healthy, hearty snack to grab on the go. You can add nuts to them if desired.
Ingredients:
- 1 ripe banana 
- 1 cup rolled oats (can use some steel cut, some rolled) 
- 6 dried apricots or 2 dates (can also use similar amount of raisins) 
- 1 1/2 tsp chia seed 
- 1 1/2 tsp water 
- splash of vanilla 
- splash of cinnamon 
- additional water if bananas are not very ripe (approx. 1 Tbsp) 
Directions:
1. Pre-heat the oven to 365°F.
2. Combine chia seed and water and set aside to gel for 5 min.
3. Blend banana, oats, chia, and spices
4. Spread out on a oiled cookie sheet or a silicon mat
5. Bake 365 degrees for approximately 35 minutes
6. Cool bars and then cut into 2” x 2” squares.  Enjoy
6. Cool cookies on baking sheet for about 5 minutes or so and then transfer to a cooling rack for another 10-15 minutes.
